In this era of wall-to-wall television shows about chefs competing, fighting and sometimes even cooking, some diners like to go to restaurants with a camera-ready face at the helm.
And in Stamford now, Paloma fits the bill. Aarón Sánchez, chef-partner at the restaurant, has appeared as a co-host on “Heat Seekers,” as a judge on “Chopped!” and as a co-star on other shows.
The chef’s expertise is evident in the diversity of his smart menu. I spoke with Mr. Sanchez by phone after my visits. He grew up in El Paso, a city along the Texas-Mexico border, has restaurants in New York and said he chose Stamford for Paloma “because many of my customers are from Fairfield County and I know they are well-traveled and have well-developed palates.” Paloma’s cuisine is considered Latin: Spanish and South and Central American.
